In every little girl’s bookshelf, you can find Pinkalicious. The series centers around a girl called Pinkalicious Pinkerton, and all of her adventures over the span of 64 children’s books. The first book describes how she eats too many pink cupcakes, against her mother’s will, and wakes up pink the next morning. For a nostalgic treat, we decided to bring these very special cupcakes off the page and into the oven for you!
Cupcake Recipe:
1/2 cup unsalted butter, softened
3/4 cup white sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cup milk
pink food coloring
Buttercream Frosting:
3 1/2 cups confectioners’ sugar
1/2 cup unsalted butter, softened
2 teaspoons vanilla extract
1/4 cup milk
pink food coloring
Recipe
First, preheat your oven to 350 F in a lined muffin tin. In a large bowl, use an electric mixer or a whisk to beat butter and sugar together until light and fluffy. Gradually add one egg at a time, making sure to beat the mixture well after each egg. Once the mixture is fully combined, add vanilla extract.
In a medium sized bowl, combine the dry ingredients: flour, baking powder and salt. Slowly add the dry mixture and milk using a wooden spoon or rubber spatula to the wet mixture. Then, for the fun part! Add drops of pink food coloring to the batter for Pinktastic cupcakes!
Fill the paper liners with batter, and bake for 18 to 24 minutes or until golden brown. For extra safety, stick a toothpick into the cupcake and make sure it comes out clean. Once ready, remove cupcakes from the muffin tin and cool them on a wire rack.
While the cupcakes are cooling, you can make the frosting. Combine confectioners sugar, butter, vanilla, and milk in a medium sized bowl. Beat with an electric mixer, or a regular whisk until creamy and smooth. For some extra Pinkalicious love, add a few drops of pink food coloring into the frosting.
After the cupcakes have cooled, use a piping bag or a butter knife to decorate your cupcakes. Feel free to put sprinkles, fruits, or candies on top to add that Pinkerrific touch! Then dig in!

A couple weeks ago, we decided to make these cupcakes for ourselves! The process of dying the pink cupcake batter was tedious, as it was hard to obtain the perfect pink pigment. But, it all ended up working out, even if it wasn’t exactly the same. We decorated the cupcakes in a very Pinkalicious fashion, with cherries and sprinkles. Overall, we rate them 5 stars! The cupcakes themselves were very nice and light, and the buttercream really added to them perfectly! These were the perfect weekend activity, and really brought one of the best childhood books to life!
